So after gorging myself on 10 pounds of Easter candy, I gained 10 pounds last week. I feel gross. I need to eat healthier, for myself, my little baby boy I’m growing and my entire family as a whole!
I need to meal plan. I go through times when I am so good at this and it works so well, and then I get lazy! When I meal plan, I eat better, have more time and save money….why do I always stop after a few weeks? I have no idea.
I have decided to try and plan every Sunday night…and post my weekly meals in order for you guys to hold me accountable! Plus, I’d love to hear some of your favourite meals so I can get inspired! Who know, maybe my easy (like super lazy easy) meals will inspire you as well.
So here is my weekly meal plan for this week. Please note that I HATE to cook and do not make anything that takes more than 20 minutes to prepare…so try not to judge!
SUNDAY
Pulled Pork Sandwiches (from leftover pork lion roast) on whole wheat buns Note: I like Diana Sauce regular BBQ sauce on my pulled pork
Coleslaw
Potato Salad – Note – My mom makes THE BEST potato salad EVER. Her secret? Use half miracle whip and half mayo! We use 8 potatoes, 5 eggs, 3 heaping tablespoons of mayo/miracle, a dash of mustard, 1/4 diced Spanish onion, salt, pepper and paprika.
MONDAY
Spicy Chicken Wraps – I like mixed salad greens, tomato and cheese on my wraps. I use a spicy tex mex sauce on top. I totally cheat and use breaded chicken fingers for the chicken! It kinda tastes like a KFC twister!

Lasagna (yeah, the frozen kind….Don’t judge me)

Fried Egg and Cheese on Toasted English Muffins (We have a tutor come at 6:00 for Izzy, so this is a super fast meal night) I use Garden Vegetable Egg Beaters
