This recipe is amazing and you can make a HUGE pot for dinner for under $10 and under 10 minutes prep time!
Oprah Winfrey’s Famous Chicken N’ Dumpling Recipe:
2 pounds skinless, boneless chicken cut into pieces (I used leftover chicken for this recipe, so much less)
1 medium onion chopped
2 celery ribs
4 large carrots chopped or 1 cup baby carrots chopped
2 quarts chicken stock
1/2 tsp of salt
1 1/2 cup flour
2 Tbsp oil
1 cup water
A dash of salt and pepper to taste
For soup: Place everything together in a pot and bring to boil. Reduce heat and simmer 40 minutes.
For dumplings: Mix flour, salt and oil in bowl, gradually add water until stiff. Roll out to 1/4 inch thick and slice into strips.
Slide the dough strips into simmering pot, cover and reduce to low. Dumplings will be cooked through in 5-8 minutes!
Serve and enjoy! This reheats and makes AMAZING leftovers!
